Oven-baked Leeks Wrapped in Ham recipe

This simple meal makes the most of three key ingredients - sweet white leeks, smoked ham and rich cheddar cheese to create a filling, healthy, low-carb meal. You could serve this as it is, or you could serve it as a side dish.

  • 8 small leeks (white part only)
  • 8 slices smoked cooked ham
  • 150g cheddar cheese
  • 50ml milk, 50ml low fat cream cheese
  • 1 tbsp. Dijon mustard

Method of Preparation:

  1. Whisk together the cream cheese, milk, mustard and cheddar cheese.

  2. Blanch the leeks in boiling salted water for 6-7 minutes until soft and tender. Remove the leeks from the saucepan and place into cold water so they are cold enough to handle. Wrap the leeks in the ham and place into a baking dish.

  3. Pour the cheese sauce over the leeks. Place into a 200C oven for 15-20 minutes or so.

You could easily make this recipe with a creme fraiche mixture instead of with cream cheese to make the overall end result a little bit lighter. This recipe serves two as a main meal and four as a side dish.
