Ham Recipes

‘Ham’ is a cut of meat from the bend of knee or from the upper part of the pig’s leg. Hams tend to be sold cured or cooked, although they are also sold raw. The word ‘ham’ is actually derived from the English word ‘hom’, meaning the bend of the knee, and it can actually be used to describe lots of different meats, not just the meat from a pig. Ham is used in many cultures, especially in Europe where it tends to be served cured. In England, hams are often served at Christmastime as an alternative to turkey or goose. About Ham:

No-one is quite sure why, but a ham cooked with cloves and other spices, possibly including ginger and cinnamon is very traditional in Britain around Christmastime. Perhaps it’s something to do with the fact that ham pairs particularly well with wintery spices, but you’ll find ham in many homes around Britain on Christmas day.

Ham in Europe is often cured, or if it is not cured, turned into a sausage after being paired with fat and spices before being put into sausage casings and dried for a number of days. Ham sold commercially in Britain is often sold in slices as a sandwich meat, similarly to the United States. Tinned ham is popular in both countries, and this is because it is very convenient – it’s made from small cuts of ham and tends to be covered in savoury jelly.
